Ingredients:
1 egg
2 tablespoons of butter
½ cup sugar
1 cup of gluten-free flour (I used Domata Recipe Ready Flour)
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon of vanilla
¼ of almond milk
1 cup of fresh or frozen cherries, well drained
Directions:
Preheat the oven to 375 F degrees.
Grease and flour with powdered sugar standard bread pan
In a medium sized bowl, cream together the egg, butter and sugar.
Add all the additional ingredients except the cherries and stir until well blended.
Gently fold the cherries into the sticky batter and then pour into the prepared pan.
Bake for 40- 45 minutes. Remove and place on rack to cool.
